Safiyah's Four Ingredient Focaccia Bread

Chef Safiyah's simple 4-ingredient focaccia recipe from her Staple Bakes community cooking course is a delicious and easy way to make fresh, homemade bread. The ingredients includes only flour, yeast, sea salt, and olive oil.

Ingredients

  • 500g strong white bread flour 

  • 450ml luke warm water

  • 5-7g fast action yeast 

  • 5g sea salt flakes 

  • 50ml olive oil

Method

  1. Add flour, yeast and salt to a mixing bowl and mix together. Ensure the yeast and salt are not directly touching each other when you add them to the bowl. Direct contact can potentially kill the yeast. 

  2. Add the water to the bowl and mix altogether until fully combined with no big lumps. 

  3. Cover with cloth and set aside in a warm place for 30 mins. 

  4. After 30 mins, stretch and fold 4 times from 4 equal sides of the bowl. Set aside for another 30 mins.

  5. After the 2nd 30 mins, repeat the same 4 folds. Set aside for 30 mins. 

  6. Preheat the fan oven to 220C. Line a baking tray with greaseproof paper. 

  7. After the 3rd 30 mins, repeat the same 4 folds and then transfer to our lined baking tray. Set aside for 30 mins. 

  8. Grease your fingers with some olive oil and then drizzle olive oil on top of the dough. Gently press your fingers into the stretched dough until your see some bubbles form on the surface. 

  9. Clean your hands and then sprinkle on a good pinch of sea salt flakes. 

  10. Bake at 220C for 10 mins. 

  11. Bring the temperature down to 180C and then move the tray to a low part of the oven and bake for a further 12 mins. 

  12. Remove from the oven and on a wire rack to cool. 

  13. Serve and enjoy fresh.
